Sweet, savory, great touch of acid- this salad will hold strong at any gathering/dinner table that you bring it to!
If you ever want to switch up your boring salad, here is a delicious Korean lettuce salad that brings a lot of flavor and is SUPER simple to make. While Sangchu Geotjeori traditionally uses limited ingredients of just red and green leaf lettuce, I adapted this by adding some other vegetables to make this a more filling salad. Perfect for your summer dinner table as well- this dressing is used for the salad is so addicting, you'll want to add it to everything!
Korean Lettuce Salad (Sangchu Geotjeori)
Ingredients
Dressing
1/4 cup gochujang
1/4 cup soy sauce (I like to use Kikkoman)
2 TB of honey
2 TB of maple syrup
2 TB of sesame oil
3 TB of rice wine vinegar
5 cloves of garlic, minced
1-2 TB of my Hot Chili Oil
2 tsp toasted sesame seeds
salt/pepper to taste
Salad
4 cups of mixed red/green leaf lettuce
1 cup of shredded carrots
1 cup of julienned cucumber
3 scallions chopped on a bias
Optional: any other vegetables you desire to use (red/yellow peppers, spinach, tomatoes, etc.)
Optional: toasted sesame seeds to garnish
Method
Whisk together all the dressing ingredients in a bowl. Taste to adjust seasoning, if you want more acidity or sweetness. Or better yet, more spice!
Wash, prep and cut any vegetables you are using in your salad. Place into a large bowl.
Pour about 1/2 of your dressing on salad, tossing with tongs to combine.
Taste and add more dressing if desired. Sprinkle with sesame seeds, if desired.
Serve immediately and enjoy!
