A twist on the classic Mexican street corn. This dip is so addicting, I guarantee you'll have the favorite dish at the next get together/grill out.

Taking the classic street corn that is typicall covered in mayo, coated with cotija cheese and sprinkled with spices- this dip is super easy to make and uses limited bowls/utensils which means = easier clean up! I have made this several times this summer so far, and every time I make it I love it more and more. Creamy, a little bit of spice, great crunch and some sweetness from the corn- makes this a must have at your next picnic/gathering!
Elote Dip
Ingredients
1 cup of mayo
1 cup of sour cream
5 ears of corn, preferably grilled (roughly 3 cups worth)
1 1/2 cup of cotija cheese
2 jalapenos de-seeded and minced
1/2 red onion finely chopped
1/2 cup of finely chopped cilantro
Juice of 1 lime
1 TB of garlic powder
1 TB of paprika
2 tsp of cumin
2 TB of Tajin
2 tsp of cayenne pepper
salt and pepper to taste
Optional: Trader Joe's rolled tortilla chips or Takis, crushed and garnished
Method
Whisk together your mayo, sour cream, cotija, spices, and lime juice in a large bowl.
Grill your corn/cut off the ear, chop your vegetables and cilantro and add to your large bowl of whisked mayo/ingredients.
Taste and add more seasoning/spice if needed.
Top with optional Trader Joe's rolled tortilla chips/Takis
Serve with tortilla chips and enjoy!
